Southwestern Potato Salad - cooking recipe

Ingredients
    1 c. good-quality mayonnaise (regular or reduced calorie)
    1/4 c. Dijon mustard
    2 Tbsp. fresh lime juice
    1 medium tomato, chopped
    2 Tbsp. chopped cilantro
    1/2 jalapeno chile, seeded and finely diced
    2 scallions (white and green parts), chopped
    12 medium sized red onion, thinly sliced
    1/2 tsp. cayenne pepper
    1 small garlic clove, minced
    salt and freshly ground pepper to taste
    16 new potatoes (about 2 lb.), cooked, drained and sliced 1/2-inch thick
Preparation
    With spatula, combine mayonnaise and mustard with ingredients through salt and pepper.
    Add potatoes.
    Mix gently but well. Makes 4 to 6 servings.
