Latkes(Potato Pancakes) - cooking recipe

Ingredients
    1 egg
    1/4 medium onion, coarsely cut
    1/2 tsp. salt
    1 to 2 Tbsp. matzo meal
    2 1/2 c. diced raw potatoes (2 large Idahos)
Preparation
    In blender,
    put egg, onion, potatoes and salt.
    Do not cover; liquify.
    With rubber spatula, push potatoes down into blending mixture.
    As
    soon as mixed, shut off.
    Stir in matzo meal to make desired consistency.
    Drop by spoonfuls into 1/2 inch hot cooking
    oil
    and
    fry until golden brown.\tDrain on paper.
    Serve with sour cream and applesauce.
