Yellow Squash Casserole - cooking recipe

Ingredients
    8 c. sliced yellow squash
    1 Tbsp. water
    1/2 c. chopped onion
    1 garlic clove, minced
    2 slices day-old bread
    1/2 c. fat free sour cream
    1/3 c. diced provolone cheese
    1/4 tsp. salt
    1/4 tsp. pepper
    1 can condensed reduced fat and sodium cream of mushroom soup
    cooking spray
Preparation
    Preheat oven to 350\u00b0. Combine squash and water in a large microwavable bowl. Cover with plastic wrap; vent. Microwave on high for 6 minutes. Drain well. Place bread in food processor and pulse 10 times or until coarse crumbs form to measure 1 cup. Combine the squash, 1/2 cup bread crumbs, sour cream, cheese, salt, pepper and soup. Spoon squash mixture into a 2 quart casserole coated with cooking spray. Top with the remaining bread crumbs. Spray breadcrumbs with cooking spray. Bake for 30 minutes. Makes 12 servings. 85 calories, 1 g. fat, 1 g. fiber.
