Carrot Pineapple Cake - cooking recipe
Ingredients

3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 1/2 c. oil
3 eggs
2 tsp. vanilla
1 c. chopped nuts (optional)
2 c. grated carrots
1/2 c. crushed pineapple
Preparation

Combine sugar, oil and eggs.
Beat to blend.
Add vanilla and blend in.
Add dry ingredients and blend in, but do not overmix. Lastly, fold in pineapple, carrots and nuts.
Turn batter into a 10-inch tube pan or Bundt pan.
Bake in a 325\u00b0 oven for 1 hour and 20 minutes or until done.
Cool in pan for 10 minutes before turning out to cool on rack.
