Conch Stew - cooking recipe
Ingredients

1 qt. conchs, prepared and cut into small pieces
3 slices fat pork
1 Tbsp. cooking oil
2 Tbsp. salt
1 tsp. pepper
8 white potatoes, quartered
1 Tbsp. vinegar (optional)
Preparation

Fry out fat pork in a large pot.
Add water, cooking oil, salt, pepper and conchs.
Cook about 1 1/2 hours.
Add potatoes and cornmeal dumplings; cook 1 hour more.
If not tender, during last hour of cooking, add 1 tablespoon vinegar.
Yield: 6 servings.
