Strawberry Preserves - cooking recipe

Ingredients
    4 c. fresh strawberries
    3 tsp. lemon juice or 1/4 tsp. cream of tartar
    5 c. sugar
Preparation
    Place in a wide kettle alternate layers of sugar and berries. Bring slowly to a boil.
    After the whole mass is boiling, cook 9 minutes.
    Remove from heat.
    Add the lemon juice or cream of tartar.
    Let stand overnight.
    The second day, boil for 9 minutes. Allow to cool; place in sterilized jars.
    Seal with paraffin. Cooked this way, the preserves are beautiful and tender.
    Jelly surrounds the plump, bright berries.
