Beef Stew - cooking recipe

Ingredients
    2 lb. beef stew meat, cut in 1 1/2-inch cubes
    2 medium onions, cut in eighths
    3 celery stalks, cut in 1-inch diagonals
    4 medium carrots, cut in half, crosswise and lengthwise
    3 c. tomato juice
    1/3 c. quick tapioca
    1 Tbsp. sugar
    2 tsp. salt
    1/4 tsp. pepper
    1 bay leaf
    2 medium potatoes, cut 1/4-inch thick slices
Preparation
    Put all ingredients, except potatoes, into a 3-quart casserole.
    Bake, covered, at 300\u00b0 for 2 1/2 hours.
    Remove bay leaf and stir in potatoes.
    Bake, covered, for additional 1 hour or until meat and vegetables are tender.
    Yields 8 servings.
