Diabetic Pecan Pie - cooking recipe

Ingredients
    1 c. apple juice concentrate, thawed
    2 tsp. arrowroot or cornstarch
    3 eggs, lightly beaten
    1 heaping c. whole or broken pecans
    1 Tbsp. butter or margarine, melted
    1/2 tsp. vanilla
    1/8 tsp. salt
    9-inch partially baked pie shell
    1 tsp. lemon juice
Preparation
    Sprinkle arrowroot over concentrate apple juice in a small saucepan.
    Over low heat, stir until clear and thickened.
    Cool this.
    Beat in eggs, butter, vanilla, lemon juice and salt.
    Mix well.
    Stir in pecans and pour into a partially baked pie crust. Bake in preheated 400\u00b0 oven for 10 minutes.
    Lower heat to 300\u00b0 and bake 20 to 30 minutes or until set.
