Twice-Baked Potatoes - cooking recipe

4 medium potatoes, baked
1 c. low-fat cottage cheese
1/2 c. low-fat milk
1 Tbsp. minced onion
1/4 tsp. black pepper
1/4 tsp. paprika
1/2 tsp. fresh or dried parsley flakes
Preparation

Bake potatoes.
Cut potatoes in half lengthwise and scoop out baked pulp, being careful to keep skin in one piece.
With wire whip, beat potatoes with cottage cheese, milk and onion; spoon mixture into skins.
