Coconut Cream Pie - cooking recipe
Ingredients

3/4 c. sugar
1/4 c. + 2 Tbsp. cornstarch
1 tsp. salt
4 c. milk
5 egg yolks, slightly beaten
3 Tbsp. butter, softened
2 tsp. vanilla
1 to 2 c. coconut
prebaked pie shell
Preparation

Mix together sugar, cornstarch and salt.
Set aside.
Blend together milk and egg yolks, then stir into dry ingredients.
Cook over medium heat, stirring constantly, until mixture comes to a boil.
Continue cooking for 1 minute.
Remove from heat.
Add butter and vanilla.
Mix in coconut.
Pour into prebaked pie shell. Cover with plastic wrap and refrigerate until set.
