Blackberry Vinaigrette - cooking recipe

Ingredients
    2 tsp. cornstarch
    1/4 c. water
    1/2 c. blackberry vinegar
    1/2 tsp. salt
    3 Tbsp. lemon juice
    2 cloves garlic, minced
    fresh ground pepper to taste
Preparation
    Place cornstarch in a small saucepan.
    Gradually add water, whisking until blended.
    Stir in blackberry vinegar and remaining ingredients.
    Boil 1 minute, stirring constantly.
    Cool to room temperature, then refrigerate.
    Serve over a combination of gourmet mixed lettuce, thinly sliced red onion and chopped fresh mint.
