Ham And Cheese Stuffed Potatoes - cooking recipe

4 large baking potatoes
1 tsp. shortening
6 Tbsp. butter
2 Tbsp. chopped onion
1/4 tsp. pepper
2 eggs
1 1/2 c. shredded Cheddar cheese
1 c. diced ham
paprika
Preparation

Scrub potatoes; pat dry.
Rub each potato with shortening and prick several places with fork.
Bake for 1 hour or until done. Cut potatoes lengthwise; scoop out inside, leaving a thin shell.
