Mock Apple Butter - cooking recipe
Ingredients

4 c. pureed zucchini
4 Tbsp. vinegar
1 tsp. lemon juice
2 c. sugar
1 tsp. cinnamon
dash of allspice
2 drops red food coloring
Preparation

Peel and seed zucchini; chop coarsely.
Put zucchini in blender with vinegar; blend until smooth.
Pour in saucepan with remaining ingredients and cook, stirring occasionally, until mixture reaches desired thickness.
Put in jars and seal.
