Spud Delight - cooking recipe

Ingredients
    8 c. diced, cooked potatoes (about 6 large)
    2 tsp. salt
    2 c. cottage cheese
    1 c. dairy sour cream
    1/4 c. minced onion
    shredded Cheddar cheese (as desired)
    pinch of garlic salt
    paprika
Preparation
    Preheat oven to 350\u00b0.
    Sprinkle potatoes with salt.
    In a separate bowl, combine cottage cheese, sour cream, onion and garlic salt.
    Fold into potatoes.
    Pour into a 2 1/2-quart casserole.
    Top with grated cheese.
    Sprinkle with paprika.
    Bake in preheated oven for 1 hour.
    Makes 8 servings.
