Rice-A-L'Orange - cooking recipe

Ingredients
    1 (8 oz.) can pineapple slices
    1/3 c. chopped green pepper
    1/3 c. chopped sweet red pepper
    1/4 c. butter or margarine
    1 3/4 c. orange juice
    2 c. instant rice (uncooked)
    dash of salt
    1/8 tsp. curry powder
Preparation
    Drain pineapple slices, reserving juice.
    Chop pineapple and set aside.
    Saute peppers and onion in 1 tablespoon melted butter, in a saucepan, until tender.
    Add orange juice and bring to a boil.
    Add rice, remaining 3 tablespoons butter, chopped pineapple, salt and curry powder.
    Remove from heat.
    Cover and let stand 10 minutes, stirring once.
    Garnish with red and green pepper strips.
    Makes 6 servings.
