Lemon Wafers - cooking recipe

Ingredients
    1/2 c. margarine
    3/4 c. firmly packed light brown sugar
    1 egg
    2 tsp. grated lemon rind
    1 1/2 Tbsp. lemon juice
    1 1/2 c. all-purpose flour
    1/2 tsp. baking soda
    1/4 tsp. salt
    vegetable cooking spray
Preparation
    Cream margarine; gradually add sugar, beating until light and fluffy.
    Add egg, lemon rind and lemon juice, beating well. Combine flour, soda and salt; add to creamed mixture, mixing just until blended.
    Drop dough by rounded teaspoonful, about 2 inches apart, on cookie sheets coated with cooking spray.
    Bake at 400\u00b0 for 8 to 10 minutes.
    Remove from cookie sheet immediately and cool on wire rack.
    Yields 3 1/2 dozen (about 49 calories each).
