Eggplant Casserole - cooking recipe
Ingredients

1 medium size eggplant
1 tsp. salt
2 Tbsp. chopped green pepper
1 egg, beaten
1 medium onion, chopped
3/4 c. bread crumbs
1 c. cream-style corn
1/2 tsp. pepper
1/2 c. grated cheese
Preparation

Cook eggplant until tender.
Drain and mash, then add all ingredients, except cheese, and mix well.
Pour in 1 1/2-quart baking dish and sprinkle cheese on top.
Bake at 350\u00b0 for 30 minutes.
Good.
