Vegetables Au Gratin - cooking recipe

Ingredients
    1/2 c. sliced yellow squash
    1/2 small eggplant, sliced 1/4-inch thick
    1/4 c. sliced onion
    1/4 c. diced red bell pepper
    dash of salt and pepper
    3 Tbsp. dried breadcrumbs
    3/4 oz. shredded Cheddar cheese
    1 tsp. chopped fresh basil
Preparation
    In a 6-inch round microwavable shallow casserole, layer squash and eggplant.
    Cover evenly with onion and bell pepper; sprinkle with salt and pepper.
    Cover with vented plastic wrap and microwave for 6 minutes, until vegetables are tender-crisp.
    In a small bowl, combine breadcrumbs, cheese and basil.
    Sprinkle evenly over vegetables.
    Cover with vented plastic wrap and microwave on High for 1 minute, until cheese melts.
