New England Family Supper - cooking recipe

Ingredients
    1 1/2 to 2 lb. smoked shoulder butt
    3 c. water
    1 bay leaf
    1 Tbsp. chopped parsley
    1/2 tsp. pepper
    1/2 tsp. caraway seed
    1/4 tsp. rosemary, crushed
    1/4 tsp. tarragon, crushed
    6 carrots
    6 medium potatoes, peeled and quartered
Preparation
    In Dutch oven, place smoked pork shoulder butt, seasonings and water. Cover and simmer 30 minutes. Add vegetables.
    Continue to simmer 30 minutes. Serve meat on platter with vegetables.
