Steak Roquefort - cooking recipe

Ingredients
    1 Tbsp. butter
    1 Tbsp. flour
    1/4 c. dry white wine
    3/4 c. cream
    1/2 c. Roquefort cheese
    salt and pepper
    pinch of cayenne
    2 to 4 seasoned steaks (T-bone)
Preparation
    Sauce:
    Melt butter in saucepan.
    Add flour and whip until blended and bubbling.
    Do not brown.
    Add wine; continue to stir while boiling for 2 minutes.
    Slowly add cream; simmer 20 minutes. Add cheese and seasonings, barely returning to a boil, then remove from heat.
