Cashew Chicken Salad - cooking recipe
Ingredients

1/2 large head lettuce
1/2 red onion (medium)
8 baby carrots, cut in 4ths lengthwise
8 fresh, sliced mushrooms
a little shredded red cabbage
1 large tomato
1 ripe avocado, chopped
1 (2 1/4 oz.) can sliced black olives
2 lb. chicken tenders (tenderloins)
12 oz. Co-Jack cheese
1 1/3 c. cashews
Preparation

Use 4 large bowls.
Put in each bowl, 1/4 of first 8 ingredients.
Set aside.
