Zucchini Stuffing Casserole - cooking recipe
Ingredients

4 medium zucchini, sliced
3/4 c. shredded carrots
1/2 c. chopped onion
6 Tbsp. butter
2 1/4 c. herb stuffing mix
1 can cream of chicken soup or cream of celery soup
1/2 c. sour cream
Preparation

Cook the zucchini in boiling salted water until tender.
In saucepan, melt 4 tablespoons butter and cook the carrots and onion until done. Remove from heat. Add 1 1/2 cups stuffing, soup and sour cream. Gently stir in zucchini.
Turn into casserole bowl. Melt remaining butter and toss with remaining stuffing.
Put on top of casserole. Bake at 350\u00b0 for 30 to 40 minutes. Serves 6 to 8.
