Rhubarb Bread - cooking recipe
Ingredients

2 3/4 c. flour
1 1/2 c. brown sugar
1 tsp. baking soda
1 tsp. salt
1 egg
1 c. buttermilk
1/2 c. cooking oil
1 tsp. vanilla
1 c. finely chopped rhubarb
2 Tbsp. flour (to coat rhubarb)
Preparation

Grease two 8 x 4 x 2-inch loaf pans.
In large mixing bowl, stir flour, brown sugar, baking soda and salt.
In mixing bowl, combine egg, buttermilk, oil and vanilla.
Stir into dry ingredients; mix well.
Toss rhubarb with 2 tablespoons flour; fold rhubarb into batter.
Pour into pans.
Dot each loaf with butter and sprinkle with 2 to 3 teaspoons sugar.
Bake at 350\u00b0 for 55 minutes or until toothpick comes out clean.
Cool in pans. Remove.
