Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant, skinned
    1 medium onion
    1 medium green pepper
    garlic salt to taste
    1 can diced tomatoes or fresh
    2 oz. croutons (garlic)
    6 oz. farmers or other low-fat cheese
    Parmesan cheese
Preparation
    Using Pam saute eggplant, onion and green pepper.
    Transfer to casserole dish.
    Add rest of the ingredients.
    Mix and sprinkle with Parmesan cheese.
    Bake 30 minutes at 350\u00b0.
