Sherried Sweet Potato Casserole - cooking recipe

Ingredients
    sweet potatoes
    1 c. brown sugar
    2 Tbsp. cornstarch
    1/2 tsp. salt
    1/2 tsp. shredded orange peel
    2 c. orange juice
    1/2 c. raisins
    6 Tbsp. margarine
    1/3 c. dry cooking sherry
    1/4 c. chopped walnuts (optional)
Preparation
    Cook potatoes in boiling water with salt just until tender; drain.
    In saucepan, combine brown sugar, cornstarch and salt. Blend in orange peel and orange juice; add raisins.
    Cook, stirring constantly, over medium heat until thickened and bubbly. Cook 1 minute more, add butter, sherry and walnuts.
    Stir until butter melts.
    Pour over potatoes; bake at 325\u00b0 for 30 minutes.
