The Wayside Inn'S Corn Muffins - cooking recipe

Ingredients
    1 1/3 c. granulated sugar
    1/2 tsp. salt
    1 1/3 c. corn meal
    7 tsp. baking powder
    3 c. flour
    1 1/2 c. cold milk
    4 eggs
    1/2 c. salad oil
Preparation
    Mix all the ingredients, except the oil, for 3 minutes using the lowest speed of the mixer, or by hand, until well mixed.
    Then slowly add the oil as you mix for another 3 minutes, again using the lowest speed or stirring by hand.
    Fill well-greased muffin tins 3/4 full of batter.
    Bake in preheated 350\u00b0 oven for 15 to 20 minutes, until golden brown.
    Makes 18 muffins.
