Minestrone - cooking recipe
Ingredients

1 Tbsp oil
1 cup chopped onions
1 cup chopped green pepper
3 cloves chopped garlic
1 cup chopped celery
1 cup chopped carrots
1 cup chopped zucchini
dash cayenne
1 tsp thyme or oregano
1 tsp basil
1-1/2 cup cooked white beans
1/2 cup uncooked small pasta
1 cup chopped tomatoes, including juice
4 + cups water
1/4 cup chopped parsley
Preparation

Saute onions, peppers and garlic in oil until wilted. Add celery, carrots, zucchini, cayenne, thyme and basil. Mix well. Cover and steam for 10 minutes. Add beans, pasta, tomatoes and water. Simmer until veggies are just tender. Sprinkle with parsley.
Freezes well.
