Eggplant Dish - cooking recipe

Ingredients
    1 small eggplant
    4 medium tomatoes, sliced
    2 medium size green peppers, chopped
    2 medium onions, chopped
    3/4 tsp. salt
    1/4 tsp. pepper
    1/8 tsp. garlic powder
    1 (12 oz.) pkg. sharp Cheddar cheese, cut into 1/8-inch slices
Preparation
    Cut eggplant into 1/4-inch slices. Cook in a small amount of boiling water for 5 to 10 minutes or until eggplant is tender. Drain well.
