Zucchini Oatmeal Muffins - cooking recipe

Ingredients
    2 1/2 c. flour
    1 1/2 c. sugar
    1 c. pecans, chopped
    1 medium zucchini (10 oz.), finely shredded
    3/4 c. oil
    1 Tbsp. baking powder
    1/2 c. quick oats
    1 tsp. salt
    1 tsp. cinnamon
    4 eggs
Preparation
    In large bowl measure first 7 ingredients.
    In medium bowl with fork, beat eggs slightly; stir in zucchini and oil.
    Stir the rest of ingredients all at once.
    Batter will be lumpy.
    Spoon into greased muffin tins.
    Bake at 400\u00b0 for 25 minutes.
    Check with toothpick.
    Makes about 12.
