Sour Cream Apple Pie - cooking recipe

1 (9-inch) unbaked pastry shell
2 c. sliced, peeled tart apples (3 medium)
1/3 c. sugar
2 Tbsp. all-purpose flour
1 c. sour cream
1 egg
1 tsp. vanilla extract
mint sprig for garnish
Topping (recipe follows)
Preparation

Prepare pastry shell; set aside.
Put apples into a heavy saucepan.
Reserve 4 slices for garnish.
Cook apples over low heat (without water), stirring occasionally, until tender.
Mash cooked apples slightly.
Mix sugar and flour.
Gently stir into apples. Turn into pastry shell.
