Italian Rice Pie(Easter) - cooking recipe

Ingredients
    3 lb. Ricotta cheese
    6 eggs
    2 c. sugar
    cinnamon to taste
    1 shot Rock & Rye
    3/4 c. rice
    1 1/2 c. water
Preparation
    Mix the first 5 ingredients in large bowl.
    Cook the rice in 1 1/2 cups water for 20 minutes in covered saucepan.
    Rinse with cold water; drain and add to mixture in large bowl.
    Pour into 3 (9-inch) Pyrex pie plates.
    Sprinkle a little cinnamon; bake at 350\u00b0 for 40 minutes.
    For doneness, check for golden crust or bubbling mixture.
