Lemon Squares - cooking recipe
Ingredients

1 c. all-purpose flour
1/4 c. powdered sugar
1/2 c. butter, softened
2 eggs, lightly beaten
1 c. sugar
2 Tbsp. flour
2 Tbsp. lemon juice
rind of 1/2 lemon
Preparation

Mix with a spoon flour, powdered sugar and softened butter (not melted).
Press into ungreased 8 x 8 x 2-inch pan, covering bottom and sides to 1/2-inch of edge.
Bake at 350\u00b0 for 20 minutes.
Hand mix the next 5 ingredients for 3 minutes or until light and fluffy.
Pour over hot crust.
Bake at 350\u00b0 for 20 to 25 minutes or until no imprint is left when touched.
Cover and cool overnight.
Sprinkle with powdered sugar and cut into squares. Serves 16.
