Zucchini Squash Relish - cooking recipe
Ingredients

3 large or 10 c. zucchini
3 green peppers, chopped
6 small hot peppers, chopped
4 Tbsp. salt
2 1/4 c. vinegar
1 Tbsp. dry mustard
1 Tbsp. turmeric
1 tsp. celery seed
3 large onions or 4 c. chopped
3 red peppers, chopped
6 c. sugar
1 Tbsp. nutmeg
1 Tbsp. cornstarch
1/2 tsp. pepper
Preparation

Put zucchini through coarse blade of meat grinder or use food processor.
Put zucchini, onions, green peppers, red peppers, hot peppers and salt together.
Soak overnight.
Drain and rinse. Drain well again.
Put in canning kettle and add balance of ingredients. Bring to a boil, then reduce heat to medium and boil for 30 minutes.
Jar and seal.
