Scalloped Eggplant - cooking recipe

Ingredients
    1 large eggplant
    1 tsp. butter
    1 green pepper, chopped
    1 small onion, chopped
    pepper
    1 c. bread crumbs
    1 qt. chopped raw tomatoes
    2 tsp. salt
Preparation
    Pare eggplant; cut into small pieces.
    Heat butter in skillet. Add onions and pepper.
    Cook for a few minutes; add tomatoes, eggplant and seasoning. Cook for 10 minutes.
    Place in shallow greased baking dish.
    Cover with crumbs.
    Bake for 15 minutes at 350\u00b0, until crumbs are browned.
