Salmon Croquettes - cooking recipe

Ingredients
    1 (14 oz.) can pink salmon
    1/2 c. cooked, diced potato
    2 Tbsp. chopped onion
    5 saltine cracker crumbs
    1 beaten egg
    dash of black pepper
    1/4 c. cornmeal
    1 c. oil
Preparation
    Drain salmon and remove bones.
    Mix salmon, potato, onion, cracker crumbs, egg and black pepper.
    With a spoon, form a ball with the mixture and roll in cornmeal.
    Form small patties and fry until golden brown.
