Chicken And Sausage Gumbo - cooking recipe
Ingredients

1/2 c. cooking oil
1 medium onion, chopped
3/4 c. chopped parsley
1 chicken, skinned and boned
salt
hot, cooked rice
1/4 c. flour
1 c. green onions, chopped
6 qt. water
2 lb. sausage
pepper
Preparation

Heat oil in a large Dutch oven.
Add flour, stirring constantly on medium heat until medium brown, about 30 minutes. Add onion and cook for 10 minutes.
Add celery, parsley, bell pepper, green onions and then water.
Add seasoned chicken and sausage.
Bring to a boil; cover and simmer for 2 hours or until the gumbo tastes done.
Be sure it's seasoned to your taste. Serve in bowl topped with cooked rice.
Serves 8.
