Italian Zucchini Casserole - cooking recipe

Ingredients
    2 to 2 1/2 lb. zucchini
    4 Tbsp. oil or oleo
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    4 oz. can mushrooms
    6 oz. can tomato paste
    1 c. water
    4 oz. shredded Cheddar cheese
    1 pkg. spaghetti sauce mix
    Parmesan cheese
Preparation
    Slice zucchini into 1/2-inch pieces, put in boiling water. Boil 4 to 5 minutes.
    Drain.
    Place in baking dish.
    Saute onion and peppers in oil, add spaghetti sauce, Cheddar cheese, mushrooms, paste and water.
    Mix well and pour over zucchini. Sprinkle top with Parmesan cheese.
    Bake 350\u00b0 about 25 to 30 minutes.
    Cook in microwave for 13 minutes, turning pan once.
    Let stand for 5 to 10 minutes.
