Ingredients

1 to 2 onions
1 to 2 Tbsp. butter
2 c. boiling water
1/2 vegetable cube (Knorr)
2 Tbsp. vegetarian beef flavor soup stock
croutons
soy Parmesan cheese
soy Mozzarella and Cheddar cheese, mixed (grated melts better)
Preparation

Saute onions in butter. Add boiling water, vegetable cube and soup stock.
Pour into individual crocks.
Top with croutons and cheeses.
Put in a 375\u00b0 oven for 10 minutes or until lightly browned or melted on top.
