Eggplant Casserole - cooking recipe
Ingredients

2 small eggplant
1 or 2 green peppers, sliced
salt and pepper
2 Tbsp. butter
8 oz. Mozzarella cheese, sliced or grated
1 medium red onion, sliced
2 large sliced tomatoes
2 Tbsp. flour
1/2 can Parmesan cheese
Preparation

Slice eggplant 1/2-inch thick, leaving skin on. Arrange slices in a 13 x 9 x 2-inch casserole dish.
Layer onion, green peppers and tomato slices.
Sprinkle salt, pepper and flour on top. Dot with butter and sprinkle with Parmesan.
Top with Mozzarella. Cover top lightly with foil and bake at 375\u00b0 for 30 to 45 minutes or until eggplant is done.
