Redneck Caviar - cooking recipe
Ingredients

2 c. black-eyed peas, cooked (or 2 cans)
2 medium onions, thinly sliced and diced
1/8 tsp. dried red pepper, crushed (optional)
1/4 tsp. salt
1/2 c. bell pepper, thinly sliced and diced
1/2 c. canola oil
1/4 c. wine or cider vinegar
1 clove garlic, crushed and finely chopped
Preparation

Drain peas.
(Rinse if canned.)
Combine all ingredients and refrigerate, covered, overnight or longer.
Turn several times with slotted spoon to marinate.
If double or triple, reduce garlic and red pepper.
Remember that strong herbs have a \"multiplier\" effect.
