U.S. House Of Representatives Bean Soup - cooking recipe

Ingredients
    2 lb. white Michigan beans
    water to cover
    smoke ham hock
    salt and pepper to taste
Preparation
    In a large pot, cover beans with cold water and soak overnight.
    Drain and cover with water again.
    Add ham hock and simmer slowly for about 4 hours or until beans are tender.
    Add salt and pepper to taste.
    Just before serving, bruise beans with a large spoon.
    Makes 6 servings.
