Pineapple Cheese Salad - cooking recipe

Ingredients
    1 envelope unflavored gelatin, dissolved in 2/3 c. cold water
    1 small can crushed pineapple
    1/2 c. sugar
    3 Tbsp. lemon rind
    1 (5 oz.) glass pimento cheese spread
    1/2 c. chopped nuts
    1 (11 oz.) can mandarin oranges, drained
    1 (8 oz.) Cool Whip
Preparation
    Drain syrup from pineapple into small pan, being careful to drain well.
    To the syrup, add sugar and simmer for 5 minutes.
    Add lemon juice and cheese spread.
    Stir.
    Add dissolved gelatin and chill until partially set.
    Stir in pineapple, nuts and oranges. Fold in Cool Whip and pour into 9-inch square pan.
    Chill until firm.
