Sunkist Lemon Bars - cooking recipe
Ingredients

1 egg
1/3 c. softened butter or margarine
1 pkg. lemon cake mix (I use Betty Crocker)
2 eggs
1 c. granulated sugar
1/2 tsp. baking powder
1/4 tsp. salt
2 tsp. grated lemon peel
1/4 c. lemon juice
confectioners sugar (if desired)
Preparation

Heat oven to 350\u00b0.
Mix 1 egg, butter and dry cake mix until crumbly; reserve 1 cup.
Pat remaining mixture lightly into ungreased 9 x 13-inch pan.
Bake until lightly browned, about 15 minutes.
Beat 2 eggs, sugar, baking powder, salt, lemon peel and lemon juice with rotary beater until light and foamy.
Pour over hot crust.
Sprinkle with reserved crumb mixture.
Bake about 15 minutes or until lightly browned.
Sprinkle with confectioners sugar, if desired.
Cool, cut into about 2 x 1 1/2-inch bars. Makes 32 bars.
