Onion Corn Bread Muffins - cooking recipe
Ingredients

1 c. yellow cornmeal
1 c. flour
3 Tbsp. baking powder
1 tsp. salt
1 egg, beaten
1 1/2 c. milk
2 Tbsp. drippings (bacon or salt pork)
4 Tbsp. minced onions, browned in drippings
Preparation

Sift dry ingredients.
Add egg, milk and drippings.
Mix into batter.
Pour into greased muffin tins (8 count).
Bake 20 minutes at 425\u00b0.
