Macaroni And Cheese(Low-Fat) - cooking recipe

3 1/2 c. cooked, drained macaroni
7 oz. shredded Cheddar fat-free cheese
1/2 c. finely chopped onion
3 Tbsp. chopped parsley
1 3/4 c. fat-free cottage cheese
1/2 c. evaporated skim milk
2 Tbsp. Dijon mustard
1 slice bread, crumbled
3 Tbsp. grated Parmesan cheese
Preparation

Preheat oven to 350\u00b0.
In a large bowl, combine macaroni, Cheddar cheese, onion and parsley.
In blender combine cottage cheese, milk and mustard.
Blend until smooth.
Pour over macaroni mixture and mix thoroughly.
Season to taste with salt and pepper. Turn into a 2-quart casserole dish coated with nonstick spray. Crumble bread crumbs and Parmesan and sprinkle over casserole. Bake for 20 minutes.
