Sausage Enchiladas - cooking recipe

Ingredients
    1 lb. Owens sausage (breakfast)
    1 small onion, diced
    1 large plus 1 small pkg. cream cheese, softened
    1 can Ro-Tel tomatoes with green chilies
    12 to 18 flour tortillas
    1 can refried beans
    5 c. grated Monterey Jack cheese
    1 Tbsp. chili powder (season to taste)
    1 tsp. garlic (season to taste)
Preparation
    Brown sausage and onion in skillet.
    Pour over cream cheese in bowl.
    Mix until cream cheese is blended.
    Add Ro-Tel tomatoes and mix well.
    Spread tortillas with thin layer of refried beans, then place 1/4 cup meat mixture in center with a pinch of cheese and roll up.
    Place in greased casserole.
    Top with cheese.
    Bake at 350\u00b0 for about 20 minutes or until cheese melts.
    Serves 6 to 8.
