Vegetable And Cheese Sandwiches - cooking recipe

Ingredients
    1 1/2 c. drained low-fat cottage cheese
    1/4 c. shredded carrot
    1/4 c. chopped green pepper or celery
    1/2 tsp. finely snipped chives
    1/4 c. plain low-fat yogurt
    8 small slices whole wheat bread
    2 Tbsp. horseradish mustard
    spinach leaves
    4 slices tomato halves
Preparation
    Stir together drained cottage cheese, shredded carrots, chopped green pepper or celery and chives in a small bowl.
    Stir in yogurt.
    Spread bread slices with mustard.
    Top with spinach leaves.
    Spoon cottage cheese mixture onto bread slices.
    Top with tomato slices. Makes 4 servings.
