Terri'S Jambalaya - cooking recipe
Ingredients

1 lb. smoked sausage
1 lb. fresh sausage
1/2 lb. cubed pork
1/2 c. cut up chicken (boneless)
2 c. rice (raw)
1 small onion, chopped
1 Tbsp. cooking oil
Tony's Creole seasoning
water (enough to cover rice)
Preparation

Put oil, meats and onion in Dutch oven. Cook on medium-high heat until browned and thoroughly cooked. Add rice, stirring constantly, until rice is fried and brown.
Add seasoning and enough water to cover rice. Cook on high heat until water has boiled away. Cover and cook on low until rice is tender (about 20 minutes). Serves 6.
