Black Beans And Rice - cooking recipe

Ingredients
    1 pkg. black beans
    1 medium onion
    1 medium green pepper
    1 small bay leaf
    1/2 tsp. oregano
    1 Tbsp. vinegar
    dash of olive oil
    1/2 c. bacon grease
    salt and pepper to taste
Preparation
    Wash
    beans
    and
    soak overnight.
    Chop onion and green pepper in small pieces and saute in bacon grease.
    Bring beans to boil and add all other ingredients; let simmer for several hours.
    When just about done, add salt and pepper.
    When done mash through several
    times
    with
    potato
    masher
    to thicken juice.
    If too thick,
    add
    a little hot water.
    Cook about 2 cups of rice
    for listed amount.
    Chop white onion to put over top.
