Turnip Greens With Cornmeal Dumplings - cooking recipe

Ingredients
    1 bunch (2 lb.) turnip greens (without roots)
    1 Tbsp. salt
    4 c. water
    1/4 lb. salt pork
    3/4 c. plus 1 Tbsp. self-rising corn meal
    1 egg, slightly beaten
    1/4 c. milk
    1 Tbsp. vegetable oil
Preparation
    Cut off and discard tough stems and discolored leaves from turnip greens.
    Wash greens thoroughly and place in a Dutch oven. Add salt and enough cold water to cover.
    Let soak 1 hour.
    Rinse and drain.
    Combine 4 cups water and salt pork in Dutch oven; bring to a boil.
    Add greens; return to a boil.
    Reduce heat and simmer until tender.
